Hi Bakers!
Summer has appeared abruptly for those of you in the Lower 48 and Europe and turning on an oven is probably the last thing on your to-do list. Luckily we have some no-bake, minimal effort, but maximum efficiency recipes to fall back on when the sun is beating down on us and we need to keep a cool head.
Independence Day is coming up in the USA and lands on Friday. Whether you plan on celebrating on the day or throughout the weekend, use this week to game plan the perfect homemade ice cream menu by gathering ingredients and preparing your schedule. For everyone else, might as well usher in the first official weeks of summer 2025 with something delicious!
Tips & Planning Ideas:
Hit the farmers market this weekend to stock up on rhubarb, berries, or stone fruit. Cook down with a little lemon and sugar to fold into ice cream base before freezing.
Snag any mangoes you see for sale (some really great prices right now). Peel, chop, and freeze for the easiest, fastest, dairy-free dessert.
Make name tags for each flavor for easy ID on a busy picnic table.
Grab some plastic quart or deli containers at the restaurant supply store for transporting ice cream to your party destination.
Organize a sundae bar. Put different toppings in little cups or the wells of a muffin tin.
Take things to the next level by making your own caramel sauce, fudge, and/or whipped cream.
Float on! Pick up some soda for a classic float or plain seltzer water to pair with fruit puree and vanilla ice cream.
Consider your add-ins. Sprinkle in shards of chocolate or chopped bits of brownie, cheesecake, or pound cake then fold together before freezing. You can also try ribbons and swirls of jam, chocolate fudge, and caramel for even more variety.
Fruity/Creamy Frozen Dessert Cheat Sheet:
Sherbet or sorbet? What’s the difference? They can be made with a lot of the same ingredients - some with dairy, some without. Let’s take a look:
Ice Cream - The ice creams in this article feature a no-churn base made with heavy cream. Other custard-based ice creams have milk and/or cream, and sometimes eggs.
Sorbet - This non-dairy option is made up of blended fruit that's been sweetened with simple syrup, maple syrup, or honey.
Sherbet - Sherbet is like a cross between sorbet and ice cream. It is heavy on the fruit but with a bit of dairy to make it creamy.
Frozen Yogurt - Frozen yogurt is akin to ice cream but uses cultured milk and typically an increased amount of sugar. For a fruity, no-churn version, add 1 cup of plain Greek yogurt to the Raspberry Mango Sherbet recipe below.
6 No-Churn Ice Cream Recipes:
Passion Fruit Ice Cream - you’ll love how the tart passion fruit cuts through the sweetness of no-churn ice cream.
Atlantic Beach Pie Ice Cream - with an utterly addictive Saltine cracker crumble.
3-Ingredient Mango Sorbet - the easiest thing you’ll make all summer.
Dulce de Leche Ice Cream - low effort, big rewards with this creamy, butterscotch dessert.
Raspberry Mango Sherbet - heavy on the fruit and sweetened with condensed milk for a slightly creamy texture.
Rhubarb Ice Cream - an easy stewed rhubarb turns the whole thing blushing pink!
