Ermine frosting is my go to. I’ve not had good luck with Swiss Meringue. Sugar granules always seem to sneak in even when I’m being super careful.

Yes yay! Ermine can be so versatile. I do love SMBC, but I know what you mean. Just make sure you are cooking your whites and sugar together over a double-boiler until the sugar dissolves (it should be nice and hot). Have you tried using caster sugar?
