Hi Bakers!

Let’s make oats chic in these Toffee Oatmeal Cookies! These aren’t your regular oatmeal cookies. I traded in the raisins for crunchy caramel and baked them thin instead of thick. Where others are dense and chewy, these are crisp and buttery.

As we wrap up summer break, I’m trying to balance fun-filled days with quiet nostalgia. Some days we head to the pool or into downtown Vancouver, while many nights are spent watching the kids climb the tree in the backyard or picking blackberries in the laneway behind the house. On treat nights, we enjoy fresh cookies and homemade ice cream sandwiches while chatting about the remaining summer bucket list items and the upcoming school year.

For me, I have the best memories from my childhood summers. Growing up in a small community in Northern California, our summers were split between visiting my families both in Hawaii and Michigan, diving contests and camp outs with the neighbors, and late nights playing street hockey.
