Baker’s Notes:

Bitter-sweet grapefruit; buttery, salty crust

Tangy mounds of whipped cream; a no-bake delight!

Hi Bakers!

If you love zesty desserts and creamy concoctions, then you will adore this vibrant Grapefruit Pie. We’ve got Salt! Sweet! and Bitter! that combine to make a brilliant symphony of flavors for your taste buds. It’s also no-bake, easy to assemble, and perfect for a springtime celebration. 

I don’t love many mixed drinks, but when I do have the occasional cocktail, it must be tart and refreshing, ideally with a little salt. I tend to lean towards passion fruit and grapefruit as the base, my favorite being a salt and pepper combination that amps up the bitterness of the grapefruit. 

This pie was inspired by a few different things - my taste for salty, bittersweet cocktails, last year’s Passion Fruit Lime Pie and this addictive Atlantic Beach Ice Cream.
