Baker’s Notes:

Tender and fluffy; mini cake-like

Cannoli-inspired orange and chocolate flecks

Hi Bakers!

These gems are like dainty, fluffy cakes with sweet vanilla glaze. They get their incredibly tender texture from ricotta. Typically flavored with lemon zest and often spiced with anise, I swapped in orange and finely shaved chocolate for a cannoli-inspired twist. 

I’m usually a crisp and chewy cookie girl, but these moist, almost cake-like cookies make me a soft cookie convert. They are light and tender with a simple glaze. The amount of flavor packed into these two-bite treats will shock you! 

This recipe really isn’t about the chocolate, but I do like the little shards of dark chocolate sprinkled throughout. Mini chocolate chips would work well here, too. The dough needs to chill for about two hours to keep their rounded shape after baking.
