Baker’s Notes:

Two flavors-for-one; reinvented classic

Versatile; playful shape and texture

Hi Bakers!

This two-for-one recipe is the best gift for the busy baker. Here we have one easy dough that makes two very unique cookies. Kept “plain,” the dough is rolled in shredded coconut and filled with raspberry jam. Transform the dough into a totally new cookie by adding pistachios, a little matcha, and topping with milk chocolate.

The cookie base is buttery and tender. You could keep it as is or roll in sprinkles, nuts, or coconut - as I did here. Admittedly, I don’t really like shredded coconut. But the idea of them looking like snowballs was too cute to pass up. And you know what? They were delicious! Raspberry jam is the perfect match, but apricot would be beautiful and citrus curd just as delightful. 

Adding a small amount of chopped nuts and matcha powder gave the cookies an entirely new identity without changing the base recipe. The hint of matcha adds a sweet and earthy flavor and is responsible for the cookies’ natural green color. The chocolate center is actually a Hershey’s Kiss that melted onto the warm cookies. You could make a ganache, but this was 10X easier.
